We had some delicious couscous last night:

1 1/4 c. water
1 tbsp olive oil
1 tsp salt
1 tsp cumin
1/2 tsp coriander
1/4 tsp cinnamon
1/4 tsp pepper

bring water and spices to a boil, add 1 c quick-cooking couscous, remove from heat and cover for 5 min (according to package directions)

when couscous is done, stir in one can of chick peas and some lemon zest.

i added some of my favorite lemon pepper (jane's krazy mixed-up seasoning, to taste.

  1. So we made this tonight, but with Israeli couscous instead of regular. I think I overdid it with the salt, but aside from that it was really good.
