Cry for Mushroom Suggestions

Our local Harmon's sells a wide variety of fancy fresh mushrooms and I really want to try them. When I cook with mushrooms I usually use cremini/baby bellas or shiitake, but the store often has enoki, blue foot, maitake, or oyster mushrooms (as well as various fancy dried types). Has anyone used these? What are they good in? I know enoki mushrooms are used in Japanese stuff but I don't know how. I usually use mushrooms in risotto or soup, or as burrito filler (sounds crazy but it really works), but I'd like to branch out. Ideas? Experiences?

  1. Well, well, well, here's something I can finally contribute a little something on. I can't think of too many mushroom varieties that don't work in stir-fries: shiitake, enoki, maitake, lion's mane, oyster. We put them in couscous, in omelettes.

    If you can find chanterelles (we get them here) they're awesome sauteed in butter and cream, or in stroganoff.

    Mostly we just sautee whatever mushrooms we can find in butter and olive oil and season with salt and pepper, and that's hard to beat. But Akiko has a great recipe that we'll post in on its own in a few seconds here...

  2. enoki work well in clear soups (specifically ramen-y type soups) and you don't have to cook them. Just put them in the bowl and pour the hot soup over top.

    Oyster mushrooms are, like, my total favorites!! Nothing in the world can beat sauteeing them in 1/2 extra virgin olive oil and 1/2 butter with a little minced garlic and some salt and tossing that with some hot pasta. I just love how meaty they are. Fantastic texture! END MUSHROOM RANT :)

  3. Once I thought about it I remembered enoki mushrooms in ramen, so I should try them in that or hot and sour soup next time I make it. And I hadn't thought about mushrooms on pasta, I bet that would be great. I used to think I didn't like mushrooms much, but then I realized I just don't love button mushrooms. Now that I've found a store with good fresh mushrooms I've been dying to experiment.

    I am definitely inspired now. I'll let everyone know how the 'shroom experiments go. ;)
